Carambola (Star-Fruit) Fish
Ingredients:
filets of fresh white meat fish (about 1/2 inch thick)
2 or 3 carambolas- sliced
salt
pepper
juice of 1 lime
2 Tbsp. room temperature butter
1. Smear 1 Tbsp of the butter in a baking pan just large enough to fit fish in one layer
2. Place the fish on top of the butter. Sprinkle with salt and pepper
4. Place sliced carambola on top of the fish. Sqeeze lime juice over top the fish.
5. Cook fish in a 350F oven until just opaque.
6. Serve hot with coconut rice (substitute 1/3 of the cooking water with coconut milk).
